Space Served With Warm Potato Salad

One of my many interests includes space. I am not sure if I should say it like this. Or is it like saying I really like Ryan Gosling? I mean duh!

Anyway.

Ted.com has recently published a number of talks about space, and the one by the planetary scientist Carolyn Porco was an absolute thrill to watch. She is showing Cassini’s images of Saturn, its largest moon, Titan, and frozen Enceladus, which seems to shoot jets of ice. Truly fascinating stuff.

But wait a minute. Does not learning more about space make us feel insignificant and finite and lonely? You can view space as half full or half empty I guess. Space exploration these days is what Earth exploration was in the 14-15th centuries. It’s brave, it’s new, it’s amazing. It totally fascinates me.

So why not watch this beautiful video during your lunch break and let yourself be overcome by beauty of the images, significance of the discoveries and awareness of the vastness of Universe? To make use of all that salivating (you geeks! 🙂 )  you can give a Dutch flavour to your lunch. Here is a recipe of the Warm Potato Beetroot Salad translated by yours truly from Dutch. Serves 4

Ingredients: 500 g waxy potatoes peeled and diced • 300-400 g sliced ​​cooked beets peeled and diced • 200g diced ham • 8 small gherkins, chopped • 4 spring onions chopped • salt • freshly ground pepper
Dressing: 4 tablespoons mayonnaise • 2 tablespoons yoghurt • salt • freshly ground pepper • 2 tbsp chopped chives
Mix everything in a bowl. Enjoy!
